MONTELLORI PAS DOSÉ IGT Bianco Metodo Classico Grapes: 100% Chardonnay Area of Origin: Montalbano. The vineyards are located in Montalbano’s hills around 500 m above sea-level. The soil rich in limestone and silica guarantees mineral notes at the wine. The vine is grown with a “pergola” system, so the grape does not suffer from direct sun. This preserves the quality. Aging: the wine remains for 36 months in contact with the yeast. After this time the “degourgemant” takes place. Tasting Notes: yellow gold colour with fine and persistent “perlage”. Persistent and elegant aromas, you can taste ripe peach, white flowers and notes of yeast, mineral and fresh notes. A long finish that reflects the same sensations within the aroma. MANDORLO IGT Toscana Bianco Grapes: 50% Chardonnay, 25% Sauvignon blanc and 25% Viognier Area of Origin: Montalbano and Montellori hill. The vineyards are at 500 meters above sea level. The soil is rich in silica and limestone which brings the minerality and the freshness of the wine. The manual harvest is around mid August. Vinification: fermented in stainless steel tanks at temperature of 12°C for 20 days. Aging: matured in steel tanks, to preserve the freshness of the wine and to keep the aromas deep and persistent. Tasting Notes: light yellow colour light hints of green. Very complex wine with persistent aromas of white flowers and citrus notes. This wine is elegant, well balanced and harmonic. CHIANTI DOCG Chianti Grapes: Sangiovese 100% Area of Origin: Cerreto Guidi. The vineyards are located in the area of Cerreto Guidi at 100-150 meters above sea level. The soil of the vineyards is clay. Harvest is around the middle of September. Vinification: fermented in stainless steel tanks at controlled temperature of 25-28°C; maceration on the skins lasted for about 20 days. Aging: the wine was matured in steel 12 months to preserve the freshness and the fruitiness and few more months in bottle. Tasting Notes: purple colour. Elegant with typical aromas of Sangiovese, wide and persistent; cherry and red berry fruits taste, with good acidity and well balanced. A true expression of Cerreto Guidi’s terroir. CASELLE DOCG Chianti superiore Grapes: 90% Sangiovese, 10% Syrah Area of Origin: San Miniato. This is our selection of Chianti with less yield per hectare. The clay soil and the variety in it’s composition gives an excellent balance of the final product. Vinification: fermentation with maceration carried out in steel tanks at a controlled temperature of 25/28°C, for 20 days. Aging: Chianti Caselle aged for a period of 12 months partly in steel tanks and partly in tonneaux. The wine was further aged in bottle for a period of minimum 3 months prior to leaving the cellar. Tasting Notes: purple color, a bouquet of red fruits and a touch of black pepper (Syrah aromas) are persistent. The short passage in wood permits a better harmony of fragrance and taste. MORO IGT Toscana rosso Grapes: Sangiovese 70%, Cabernet and Merlot 30% Area of Origin: Cerreto Guidi, Moro farm. The vineyards are located in the area of Cerreto Guidi at 150 m above sea level, on a clay based soil. The period of the harvest depends on the grape-variety. Vinification: fermented in stainless steel tanks at controlled temperature of 26- 28°C; Maceration on the skins lasted for about 20 days. Aging: the wines were assembled and matured both in steel vats and in tonneaux (oak barrels of 5 hl), for about 12 months. Tasting Notes: dark garnet red color. Red fruits and aromatic herbs notes. TUTTOSOLE IGT Toscana rosso Grapes: 100% Syrah Area of Origin: San Miniato. The vineyard is located upon the hills of San Miniato approximately 200 m above sea level. The soil contains clay as well as sand. Vinification: fermentation and maceration took place in stainless steel tanks at a controlled temperature of 25/28° for a period of approximately 28 days. Aging: the wine was aged in French barriques for nearly 1 year. The wine achieved a lovely balance between the cellar as well as bottle aging prior to being released. Tasting Notes: color of intense purple, extremely clean. The bouquet shows notes of piexcspie spice, tabacco and mature fruits. DICATUM IGT Toscana rosso Grapes: 100% Sangiovese Area of Origin: Cerreto Guidi. Single vineyard, that is located in the Cerreto Guidi area, around 150 m above sea-level. The wine rested in our cellars prior to release for a minimum of 2 years. Tasting Notes: garnet red color. Very elegant aromas with red fruits and cherry. Taste of ripe red fruits and balsamic notes. SALAMARTANO IGT Toscana rosso Cabernet Merlot Grapes: Cabernet Sauvignon 70%, Cabernet Franc 20% and Merlot 10% Area of Origin: Cerreto Guidi. The vineyards are located in Cerreto Guidi area, around 150 m above sea-level. The vineyards of Cabernet Sauvignon and Cabernet Franc are situated on loose soils rich in fossils and Merlot is on clay soil. Vinification: fermentation with maceration in steel tanks with controlled temperature of 25/28°C, for a period of 28 days. Aging: in French oak barrique 60% brand new, for a period of 14 months. The final blend results in an elegant and balanced wine. Tasting Notes: purple colour with garnet tints, full bodied and complex. Very elegant and persistent; cassis and tobacco notes. VIN SANTO DOC bianco empolese Grapes: 100% Trebbiano Area of Origin: Fucecchio. The best selected grapes start to dry naturally on rough mats until February-March. After this time grapes are pressed and fermentation starts in small barrels called “Caratelli”, where the Vinsanto Montellori stays for a minimum time of 5 years. The wine continues to age in the bottle. Tasting Notes: amber colour with gold hints. Complex notes of dry fruits and figs. Taste recalls sweet notes and honey. Very persistent and deep in aromas.
